Serves 2-3 people
1 handful of walnuts or pine nuts
3 large handfuls of spinach leaves
3 tbsp nutritional yeast
3 tbsp extra virgin olive oil
2 tbsp lemon juice
2 cloves of garlic, peeled
1/2 tsp salt
Combine the ingredients in a blender and blend till the mixture becomes a thick paste-like consistency
Add your pasta of choice to boiling water
Cook pasta for 8-9 minutes, add 1 cup of cold water to stop cooking
Combine sauce into cooked pasta, sprinkle salt, pepper, chilli flakes, and basil (optional)
