Vegan Spinach and Walnut Pesto Pasta!

Serves 2-3 people






Ingredients:

  • 1 handful of walnuts or pine nuts

  • 3 large handfuls of spinach leaves

  • 3 tbsp nutritional yeast

  • 3 tbsp extra virgin olive oil

  • 2 tbsp lemon juice

  • 2 cloves of garlic, peeled

  • 1/2 tsp salt


Directions:

  1. Combine the ingredients in a blender and blend till the mixture becomes a thick paste-like consistency

  2. Add your pasta of choice to boiling water

  3. Cook pasta for 8-9 minutes, add 1 cup of cold water to stop cooking

  4. Strain pasta

  5. Combine sauce into cooked pasta, sprinkle salt, pepper, chilli flakes, and basil (optional)

  6. Enjoy! :)
