An adaptation of Emily Mariko's viral salmon rice bowl, this simple, healthy recipe is perfect for a quick and easy lunch on a hot, summer afternoon.
Chop up salmon into small pieces and cook rice
While rice is cooking, mix salt, pepper, onion powder, garlic powder, parsley flakes, and cayenne pepper into a separate bowl
Season salmon pieces with the mixture
Spray pan with olive oil (1 tbsp) and fry salmon until pieces are cooked through
While salmon is cooking, add ingredients for the sauce into a separate bowl and whisk with a fork until properly combined
Add cooked rice to a bowl, top with fried salmon, and spicy mayo sauce, (optional: add sliced avocado, broccoli, carrots, and other vegetables) and enjoy!
